Today, we’re firing up the pellet grill. You could definitely use other types of bbq smoker grills but I’m enjoying my Pit Boss Pro Series grill that the kids got me for Christmas a couple of years ago.
I’m sharing my tips for how to smoke a brisket in a smoker AND how long to smoke a brisket. Those are two of the most common questions I get about smoking meat on the grill.
SMOKING A BRISKET ON A PELLET GRILL
I’ve decided to cook one slab today. I intentionally chose a small cut of meat. My method for choosing the best brisket is to talk directly to the butcher at our smalltown grocery store. This way, you can get the exact size you’d like and they are happy to accommodate that for you.
Below I’ll spell out all the details of how to cook a brisket on the bbq grill. First, let me show you the ingredients list.
WHAT YOU NEED
- brisket
- smoker
- pellets
- seasonings
- foil
- thermometer
- meat platter
I couldn’t find the exact wood chips I used online, but these smoker grilling pellets are similar blends of mesquite, etc.
INSTRUCTIONS OVERVIEW
- Step 1 – preheat pellet grill & pellets to 200 degrees.
- Step 2 – season the brisket liberally.
- Step 3 – add meat to grill properly.
- Step 4 – close lid and cook for designated time – checking frequently.
- Step 5 – before cooking time is up, wrap in foil properly.
- Step 6 – put back on the grill for the designated time.
- Step 7 – cut the brisket properly for the best tenderness.

SMOKING BRISKET STEP BY STEP
To begin, turn the grill on to 200 degrees. Wait a few minutes while watching for the grill to start smoking. That’s when you’ll know that it’s lit.
Go inside to prep the brisket in the kitchen. Season the meat liberally in every square inch with equal amounts of garlic salt and paprika. If you have a special seasoning to use, add that now.
Let the meat sit at room temperature for about ten minutes.
While you wait, use this time to check on the grill. You want it to have reached 300 degrees by now. If not, wait for the grill to warm to this temperature.
When temps are at 300 degrees, put the meat on the grill.
BEST FOR THE GRILL
Close the grill lid and keep closed to keep the temperature remains at 300 degrees. Check periodically to ensure that it’s not burning.
For small briskets, remove from the heat after 2.5 hours. Wrap the brisket in aluminum foil, secured at the ends like a present in wrapping paper.
Place the meat on the grill for another thirty minutes.
After approximately three hours (for a small brisket), remove the meat from the grill. Carefully open the foil without being burned by hot steam.

COOKING BRISKET FREQUENTLY ASKED QUESTIONS
You want to look for the grains & which way they are running. And then you want to cut against the grain – across the grain. That’s what makes it so tender.
It depends on the size of the brisket and how hot the grill is. Typically it takes from 30 minutes to 60 minutes per pound. On the 3-pounder I cooked today on 300 degrees, I did 60 minutes per pound which equals three hours for this piece of meat.
